Nilauja
Nilauja is a deeply savory braised pork dish brightened with vinegar and fermented black beans.

Ingredients for Nilauja
- 1½ kg pork soft bones
- Oil, for cooking
- 6 cloves garlic, minced
- 1 onion, chopped
- 1 thumb-sized ginger, thinly sliced
- 1 teaspoon annatto powder
- ¼ cup soy sauce
- ½ cup cane vinegar
- 1 cup water
- 3 tablespoons fermented black beans
- Freshly ground black pepper, to taste
- Chopped spring onions, for garnish
How to cook Nilauja
- 1.Heat oil over medium heat and sauté garlic, onion, and ginger until fragrant.
- 2.Raise heat to high and brown the pork on all sides; stir in annatto powder until evenly colored.
- 3.Add soy sauce, vinegar, and water. Boil, then simmer over medium-low heat for 1 hour 15 minutes until tender and nearly dry.
- 4.Add a little water, stir to loosen the sauce, then add fermented black beans and simmer on low for 15 minutes.
- 5.Season with black pepper, garnish with spring onions, and serve hot.
