Cheesy Pulled Pork Lechon Taquitos

This recipe turns leftover lechon into crisp hand-held snacks with a sweet-savory glaze, cheese, and fresh coriander.

Ingredients for Cheesy Pulled Pork Lechon Taquitos

  • 1 1/2 cups leftover Filipino lechon, recooked and shredded
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon tomato ketchup
  • 6 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 12 small corn tortillas, or flour tortillas
  • 12 processed cheese squares, cut in half
  • 1/2 cup fresh coriander, chopped
  • 1 tablespoon oil, for brushing tortillas

How to cook Cheesy Pulled Pork Lechon Taquitos

  1. 1.In a skillet over medium heat, sauté the minced garlic until fragrant. Add the shredded lechon, soy sauce, brown sugar, tomato ketchup, and ground black pepper.
  2. 2.Cook while stirring until the pulled pork is lightly caramelized and sticky. Remove from the heat and cool slightly for easier wrapping.
  3. 3.Warm the tortillas briefly until pliable, then brush them lightly with oil.
  4. 4.Place a few spoonfuls of pork filling in the center of each tortilla. Add cheese and chopped coriander, roll tightly like a cigar, and place seam-side down.
  5. 5.Preheat the air fryer to 200°C. Arrange the taquitos in a single layer and cook for 8 to 10 minutes, turning halfway through, until crisp and golden.
  6. 6.Serve hot, optionally with sour cream, guacamole, salsa, and extra coriander.
