Sisig Matua
Sisig Matua is a sharp, spicy vinegar salad of tender steamed pig's face and ears.

Ingredients for Sisig Matua
- 800 g pig's face and ears, thoroughly cleaned
- 1 1/2 cups cane vinegar
- 1 onion, chopped
- 4 bird's-eye chilies, chopped
- 2 green chilies, chopped
- 2 tbsp ginger, minced
- Freshly ground black pepper, to taste
- Salt, to taste
How to cook Sisig Matua
- 1.Season pig's face and ears with salt.
- 2.Bring steamer water to a boil, add the pork to the rack, cover, and steam until very tender, about 1 hour.
- 3.Cool until safe to handle, then chop the meat into small pieces.
- 4.Toss pork with onion, bird's-eye chilies, green chilies, and ginger.
- 5.Pour over vinegar, season with salt and black pepper, and serve.
