Porbidang Kangkong
Porbidang Kangkong braises leafy kangkong in a spicy, rich coconut sauce.

Ingredients for Porbidang Kangkong
- 1 large bunch kangkong leaves, rinsed and cleaned
- 1 can coconut milk, 400 ml
- 1 can coconut cream, 200 ml
- 6 cloves garlic, minced
- 2 small shallots, minced
- 2 to 4 bird's-eye chilies, minced
- 1 pork stock cube
- Fish sauce, to taste
- Oil
- 1/4 cup fried garlic, for garnish
How to cook Porbidang Kangkong
- 1.Separate kangkong leaves from stems and cut the stems into smaller pieces.
- 2.Sauté garlic and shallots in oil over medium heat, then stir-fry chilies for 30 seconds.
- 3.Add coconut milk and pork stock cube. Bring to a high boil until slightly thickened and coconut oil begins to render.
- 4.Add kangkong stems and simmer uncovered for 90 seconds.
- 5.Add leaves and simmer 1 minute.
- 6.Stir in coconut cream, simmer 1 minute, season with fish sauce, and garnish generously with fried garlic.
