Pork Adobo with Tokwa and Tausi and Garlic Fried Rice Adobo

A hearty pork adobo made richer with fried tokwa and tausi, served with garlicky adobo fried rice for a complete Filipino meal.

Ingredients for Pork Adobo with Tokwa and Tausi and Garlic Fried Rice Adobo

  • 1 1/2 lbs pork, cubed
  • 2 pieces tofu, cubed and fried
  • 1 teaspoon brown sugar
  • 10 cloves garlic, crushed
  • 3 tablespoons salted black beans
  • 4 dried bay leaves
  • 1 teaspoon whole peppercorns
  • 5 tablespoons soy sauce
  • 4 tablespoons vinegar
  • 1 1/2 cups water
  • 5 tablespoons cooking oil
  • 3 cups leftover rice
  • 1 teaspoon salt
  • 3 tablespoons garlic oil
  • 1 1/2 tablespoons toasted garlic
  • 3 tablespoons adobo sauce

How to cook Pork Adobo with Tokwa and Tausi and Garlic Fried Rice Adobo

  1. 1.Make the toasted garlic first: put the cooking oil and crushed garlic in a pan, warm over low heat, and cook gently until the garlic is golden. Lift out the toasted garlic and reserve both the garlic and the flavored oil.
  2. 2.Heat about half of the garlic oil in a pan over medium heat. Add the pork and saute until the pieces are lightly browned on the outside.
  3. 3.Add the soy sauce, vinegar, bay leaves, peppercorns, salted black beans, and water. Bring to a boil, then cover, lower the heat to a steady simmer, and cook for about 40 minutes, or until the pork is tender.
  4. 4.Stir in the fried tofu and brown sugar. Cook for about 3 minutes more, just until the tofu absorbs some sauce and the seasoning balances. Transfer the adobo to a serving dish, reserving 3 tablespoons sauce for the rice.
  5. 5.For the fried rice, gently toss the leftover rice with the salt to break up clumps. Heat the remaining garlic oil and toasted garlic in a wide pan over medium-high heat.
  6. 6.Add the rice and drizzle in the 3 tablespoons adobo sauce. Stir-fry for 3 to 5 minutes, until the grains are hot, evenly coated, and lightly glossy. Serve the garlic fried rice with the pork adobo and tokwa.
