Beef Pares Mami
Beef Pares Mami combines sweet-savory braised beef with rich beef broth, noodles, and fresh toppings.

Ingredients for Beef Pares Mami
- 1 kg beef brisket, cut into strips or cubes
- 4 cups water, for pares
- 1/2 cup soy sauce
- 6 tablespoons brown sugar, adjusted to taste
- 3 star anise
- 2 dried bay leaves
- 1 teaspoon ground black pepper
- 1 red onion, minced
- 8 garlic cloves, minced
- Fish sauce, to taste
- Oil, for cooking
- 3 kg beef leg bones, cut into sections
- 1 tablespoon black peppercorns
- 3 large onions, quartered
- 1 whole garlic, minced
- Water, as needed for broth
- Sea salt and/or fish sauce, to taste
- 8 servings fresh noodles
- 4 spring onion stalks, chopped
- 2 large bunches Shanghai bok choy, ends trimmed
- 8 hard-boiled eggs, halved
- Soy sauce, for serving
- Sriracha, for serving
How to cook Beef Pares Mami
- 1.Sauté minced garlic and red onion in oil. Brown brisket, then add pares water, soy sauce, sugar, star anise, bay leaves, and ground pepper.
- 2.Boil, then simmer about 2 hours until the beef nearly falls apart. Reduce over higher heat until thick; season with fish sauce.
- 3.Cover beef bones with water, boil 15 minutes, then drain and rinse. Sauté whole garlic and quartered onions in a clean pot.
- 4.Add bones, peppercorns, and water to cover. Boil, then simmer about 3 1/2 hours; season broth with salt or fish sauce.
- 5.Blanch bok choy and cook noodles according to package directions. Divide them among bowls, add broth, pares, egg, and spring onions.
- 6.Serve with soy sauce and sriracha alongside.
