Calderetang Manok
Calderetang Manok is a rich tomato-braised chicken stew with vegetables, liver spread, and cheese.

Ingredients for Calderetang Manok
- 3 lb chicken, cut into serving pieces
- 2 bell peppers, sliced
- 1 potato, diced
- 2 carrots, diced
- 8 oz tomato sauce
- 3 oz liver spread
- 4 tbsp soy sauce
- 1 1/2 cups water
- 1 onion, minced
- 5 cloves garlic, minced, divided
- 1 1/2 tsp garlic powder
- 1 oz cheese, grated
- 1/2 cup cooking oil
- 1 lime, juiced
- Fish sauce and ground black pepper, to taste
How to cook Calderetang Manok
- 1.Marinate chicken with soy sauce, garlic powder, black pepper, and lime juice for at least 1 hour.
- 2.Heat oil over medium heat; fry potato and carrots until lightly browned, then drain and set aside.
- 3.Heat 3 tablespoons oil in a pot. Sauté onion and 4 cloves garlic until the onion softens.
- 4.Add chicken and sauté until medium brown. Add tomato sauce and water; boil, cover, then simmer for 40 minutes.
- 5.Stir in liver spread, bell peppers, potato, and carrots. Season with fish sauce and pepper, then cook until vegetables are tender.
- 6.Stir in grated cheese until melted, then serve hot with rice.
