Crispy Air Fried Liempo Pinakbet with Ube combines crackling pork belly with a hearty bagoong vegetable stew.

Ingredients for Crispy Air Fried Liempo Pinakbet with Ube
- 1 1/2 lb liempo
- 1 Knorr Pork Cube
- 1 purple yam (ube), cubed
- 1 1/2 cups kalabasa, cubed
- 12 sitaw, cut into 2-inch pieces
- 10 okra
- 1 talong, sliced
- 1 ampalaya, sliced
- 1 tomato, cubed
- 1 onion, chopped
- 3 thumbs ginger, crushed
- 4 cloves garlic, chopped
- 3 tbsp bagoong alamang
- 5 cups water, for boiling
- 3 tbsp cooking oil
- Ground black pepper, to taste
How to cook Crispy Air Fried Liempo Pinakbet with Ube
- 1.Boil liempo in 5 cups water for 35 minutes; remove, cool, and reserve the pork stock.
- 2.Rub pork with salt and rest 10 minutes. Air-fry at 370°F for 18 minutes per side until crisp; slice.
- 3.Heat oil in a pan over medium heat; sauté onion, garlic, ginger, and tomato until softened.
- 4.Add ube and kalabasa; sauté 2 minutes, then add 1 1/4 cups pork stock and bring to a boil.
- 5.Stir in Pork Cube and bagoong alamang; cover and cook 5 minutes.
- 6.Add talong and ampalaya for 2 minutes, then okra and sitaw for 7 to 10 minutes until tender.
- 7.Season with pepper, top with crispy liempo, and serve.
