Dinengdeng na Bunga ng Malunggay
Dinengdeng na Bunga ng Malunggay is a light pork and vegetable stew seasoned with bagoong monamon.

Ingredients for Dinengdeng na Bunga ng Malunggay
- 250 g pork belly, sliced
- 1 medium red onion, sliced
- 2 tomatoes, quartered
- 2 cups buttercup squash, cut into chunks
- 1 cup broad beans
- 8 bunga ng malunggay (moringa drumsticks), cut into segments
- 2 cups large-leaf spinach
- 3 tbsp bagoong monamon
- 2 cups water or light broth
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Dinengdeng na Bunga ng Malunggay
- 1.Warm a pot over medium heat and cook the pork belly until it takes on a light brown color. Add the onion and tomatoes, then cook until softened.
- 2.Add the water or light broth and bring the pot to a low simmer. Mix in the bagoong monamon, seasoning sparingly with salt and pepper.
- 3.Put in the squash, broad beans, and moringa drumsticks. Simmer until the squash is tender and the other vegetables are cooked.
- 4.Fold in the spinach and let it wilt briefly. Taste, adjust the seasoning if necessary, and serve hot with steamed rice.
