Spare Ribs Hamonado

Pineapple-marinated ribs simmer into a sweet-savory Hamonado with tender fruit chunks.

Ingredients for Spare Ribs Hamonado

  • 2 lb spare ribs, cut into serving pieces
  • 1 (20 oz) can pineapple chunks
  • 2 cups beef broth
  • 1 onion, chopped
  • 5 cloves garlic, crushed
  • 3 tbsp soy sauce
  • 2 1/2 tbsp brown sugar
  • 3 tbsp cooking oil
  • Salt and ground black pepper, to taste

How to cook Spare Ribs Hamonado

  1. 1.Drain pineapple chunks, reserving juice. Marinate ribs in the juice at least 1 hour, then remove ribs and reserve the juice.
  2. 2.Heat oil in a pan over medium heat. Sauté onion and garlic until softened.
  3. 3.Add ribs and cook until lightly browned. Add reserved pineapple juice, soy sauce, and beef broth; bring to a boil.
  4. 4.Add pineapple chunks, cover, and simmer over low to medium heat for 1 hour until ribs are tender.
  5. 5.Stir in brown sugar, salt, and pepper. Cook until the sauce reduces by half, then serve with rice.
