Adobong Kambing (Goat Meat Adobo)
Adobong Kambing is tender goat meat finished in a reduced soy-vinegar adobo sauce.

Ingredients for Adobong Kambing (Goat Meat Adobo)
- 1 lb goat meat, chopped
- 3 cups water
- Ginger, for boiling
- 1 medium onion, sliced
- Salt
- 3 tablespoons cooking oil
- 8 cloves garlic, crushed
- 1/4 cup soy sauce
- 1 cup water
- 1 teaspoon crushed peppercorns
- 4 dried bay leaves
- 1/4 cup vinegar
- 5 dried chilies, optional
How to cook Adobong Kambing (Goat Meat Adobo)
- 1.Bring 3 cups water, ginger, onion, and salt to a boil. Add goat and simmer until tender; drain and discard the aromatics.
- 2.Heat oil in a wok and fry garlic until light brown. Pan-fry goat until lightly browned outside.
- 3.Add soy sauce, 1 cup water, peppercorns, and bay leaves. Simmer for 10 minutes.
- 4.Add vinegar, bring to a boil, and simmer 5 to 7 minutes. Add dried chilies if using.
- 5.Continue simmering until the sauce thickens, then transfer to a serving plate.
