Palitaw sa Latik
Palitaw sa Latik are tender rice cakes served in coconut-brown sugar syrup with toasted coconut curds.

Ingredients for Palitaw sa Latik
- 2 cups glutinous rice flour
- 1 cup water
- 400 ml coconut milk, for latik
- 200 ml coconut cream, for latik
- 400 ml coconut milk, for syrup
- 200 ml coconut cream, for syrup
- 1½ cups brown sugar
- Pinch of salt
How to cook Palitaw sa Latik
- 1.Mix glutinous rice flour and water by hand into a smooth dough. Form small balls and flatten into ¼-inch-thick oval discs.
- 2.Boil 400 ml coconut milk with 200 ml coconut cream, then simmer medium, stirring, until oil separates and curds turn brown; reserve latik.
- 3.Boil remaining coconut milk with brown sugar and salt. Cook palitaw in batches until each piece floats; remove.
- 4.Add remaining coconut cream to the syrup and simmer 10 minutes. Plate palitaw, spoon over syrup, and finish with latik.
