Pinaupong Manok
Pinaupong Manok is salt-roasted whole chicken served with a buttery ginger-garlic dipping sauce.

Ingredients for Pinaupong Manok
- 1 whole chicken, size 14 to 16
- 2 whole onions, quartered
- 1 whole garlic, pounded with skin on
- 1/2 thumb-sized ginger, minced
- 3 stalks lemongrass
- Freshly ground black pepper, to taste
- 3 cups rock salt
- Banana leaves
- 3 tablespoons melted butter
- 3 tablespoons lemon juice
- 3 tablespoons chicken drippings
- 1 teaspoon ginger paste
- 3 cloves garlic, minced
- Salt, to taste
How to cook Pinaupong Manok
- 1.Rub chicken inside and out with salt, pounded garlic, and pepper. Stuff cavity with onions, lemongrass, garlic, and ginger.
- 2.Spread rock salt in an earthenware pot and cover with banana leaves. Sit chicken upright without touching the pot sides.
- 3.Cook uncovered over a low open flame for 2 to 2 1/2 hours, until chicken is tender and juices run clear.
- 4.Rest chicken on a rack and collect its drippings.
- 5.Simmer butter, lemon juice, chicken drippings, ginger paste, minced garlic, and salt over low heat for 5 minutes.
- 6.Carve chicken and serve with the warm dipping sauce.
