Burnt Basque Bibingka Cheesecake
A deeply caramelized coconut cheesecake with the familiar savoriness of bibingka toppings.

Ingredients for Burnt Basque Bibingka Cheesecake
- 500 g cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 250 ml coconut cream
- 1 1/2 tbsp all-purpose flour
- 1/2 tbsp cornflour
- 1 tsp vanilla extract
- 1/2 cup grated quickmelt or Kraft Eden cheese
- 2 salted duck eggs, sliced
- Banana leaf, cut to fit an 8 x 3-inch springform pan
How to cook Burnt Basque Bibingka Cheesecake
- 1.Heat the oven to 230°C. Beat cream cheese at medium speed until completely smooth, then beat in sugar until silky.
- 2.Beat in eggs one at a time. Mix in coconut cream and vanilla, then sift in both flours and mix only until smooth.
- 3.Line the 8 x 3-inch springform pan snugly with banana leaf. Pour in batter and arrange salted duck egg slices over it.
- 4.Bake for 20 minutes. Scatter cheese over the top and bake 20 minutes more, until darkly caramelized with a gently jiggly center.
- 5.Cool completely, remove the pan and banana leaf carefully, then chill before slicing.
