Ingredients for Kangkong and Ground Pork with Oyster Sauce Stir Fry
3/4 lb water spinach (kangkong), stalks and leaves separated
1/4 lb ground pork
3 tablespoons oyster sauce
1 onion, minced
1 head garlic, crushed
1/4 cup water
8 tablespoons cooking oil
Salt and ground black pepper, to taste
How to cook Kangkong and Ground Pork with Oyster Sauce Stir Fry
1.Heat the cooking oil in a pan over low to medium heat, add the crushed garlic after about 20 seconds, and fry slowly while stirring until golden brown.
2.Strain or scoop out the browned garlic and reserve both the garlic and the garlic oil separately.
3.Return 3 tablespoons of the garlic oil to the pan and saute the minced onion over medium heat until softened.
4.Add the ground pork and saute for 3 to 5 minutes, until it turns light brown.
5.Stir in the oyster sauce and 1/4 cup water, then cook until the liquid evaporates completely.
6.Add the kangkong stalks and stir-fry for 2 minutes.
7.Add the kangkong leaves and some of the browned garlic, then cook for 1 minute, just until the leaves wilt; add up to 1/2 cup extra water only if you want a saucier dish.
8.Season with salt and ground black pepper, transfer to a serving plate, and top with more browned garlic.
