Gerald’s Stir Fried Noodles
This hearty pancit canton-style noodle dish features tender chicken offal and crisp vegetables in a savory sauce.

Ingredients for Gerald’s Stir Fried Noodles
- 400 g fresh fine egg noodles
- 1/2 cup pork belly, sliced
- 1/2 cup chicken hearts, halved
- 1/2 cup chicken gizzards
- 1 small shallot, thinly sliced
- 3 garlic cloves, minced
- 1 tsp ginger paste
- 2 tbsp peanut oil
- 1 carrot, julienned
- 6 garlic sprouts, julienned
- 2 cups bean sprouts
- 1 tsp cornstarch
- 1 tbsp hoisin sauce
- 4 tbsp soy sauce
- 4 tbsp Chinese cooking wine
- 1 cup chicken stock
How to cook Gerald’s Stir Fried Noodles
- 1.Heat a wok until very hot, add peanut oil, and stir-fry pork, chicken hearts, and gizzards until cooked through. Remove and set aside.
- 2.Reduce to medium-high heat. Stir-fry garlic, ginger, and shallot; add garlic sprouts for 30 seconds, then carrot for 30 seconds. Set aside.
- 3.Whisk cornstarch with chicken stock, hoisin sauce, soy sauce, and Chinese cooking wine. Pour into the wok and bring to a boil.
- 4.Add noodles and toss until coated with sauce. Return meat and vegetables, add bean sprouts, and stir-fry for 1 minute before serving.
