Shrimp Monggo with Lechon Kawali
Shrimp Monggo with Lechon Kawali pairs savory mung bean stew with crisp pork belly.

Ingredients for Shrimp Monggo with Lechon Kawali
- 1 lb pork belly
- 2 1/2 tbsp Knorr Liquid Seasoning
- 1 1/2 cups cooking oil
- 6 cups water
- 1 cup mung beans
- 1 bunch fresh spinach
- 6–8 oz shrimp, peeled and deveined
- 1 Knorr Shrimp Cube
- 1 medium tomato, cubed
- 1 medium yellow onion, sliced
- 3 cloves garlic, crushed
- 4–5 cups water
- 4 tbsp cooking oil
- Salt and ground black pepper, to taste
How to cook Shrimp Monggo with Lechon Kawali
- 1.Boil pork belly in 6 cups water over medium heat for 30–40 minutes; remove and cool.
- 2.Meanwhile, stir-fry shrimp in 4 tablespoons oil for 3 minutes; remove.
- 3.Sauté garlic, onion, and tomato in the same pot, then add mung beans, 4–5 cups water, and Shrimp Cube; simmer covered until tender.
- 4.Coat cooled pork with Liquid Seasoning and rest 10–20 minutes. Add spinach to tender mung beans for 3 minutes, return shrimp, and season.
- 5.Heat 1 1/2 cups oil and fry pork over medium heat until golden and crisp on both sides; cool slightly and slice. Serve with monggo and rice.
