Pork Adobo with Sitaw
Pork Adobo with Sitaw pairs tender soy-vinegar pork belly with crisp-tender snake beans.

Ingredients for Pork Adobo with Sitaw
- 1 1/2 lb pork belly, cut into serving pieces
- 10 snake beans (sitaw), cut into 2-inch pieces
- 1 medium onion, chopped
- 5 tbsp soy sauce
- 2 1/2 tbsp vinegar
- 5 cloves garlic, crushed
- 1 1/2 tbsp brown sugar
- 1/2 tsp ground black pepper
- 2 cups beef broth, plus more if needed
- 3 tbsp cooking oil
How to cook Pork Adobo with Sitaw
- 1.Mix pork with soy sauce, garlic, and pepper; marinate for 15 minutes.
- 2.Heat oil and sauté onion until soft. Add pork with its marinade and cook over medium heat for 5 minutes.
- 3.Add beef broth, bring to a boil, then simmer on low for 45 minutes or until pork is tender.
- 4.Add vinegar and allow the liquid to return to a boil before stirring.
- 5.Add sitaw and cook 3 minutes. Stir in brown sugar and cook 5–8 minutes until beans are tender.
- 6.Serve hot with the adobo sauce.
