Ingredients for Gisadong Sayote
2 large chayote, sliced
300 g pork belly, cubed
1/2 cup chicken stock
4 garlic cloves, minced
2 small shallots, finely chopped
Fish sauce or sea salt, to taste
Freshly ground black pepper, to taste
Oil, for cooking
How to cook Gisadong Sayote
1.Warm oil in a wok and cook the pork over medium-high heat until browned and crisp. Lift it out and reserve.
2.Using the rendered fat in the wok, cook the shallots and garlic until the shallots are soft and aromatic.
3.Stir in the sliced chayote and toss over the heat for 1 minute.
4.Pour in the chicken stock and return the pork. Bring the liquid up to a boil, then cook at a steady simmer for about 5 minutes, until the chayote is tender.
5.Taste and finish with fish sauce or salt and black pepper. Serve while hot.
