Sotanghon with Sayote and Giniling
Sotanghon with Sayote and Giniling is a light, colorful noodle soup with pork and chayote.

Ingredients for Sotanghon with Sayote and Giniling
- 4 oz sotanghon
- 4 oz ground pork
- 2 chayote, sliced
- 1 onion, minced
- 5 cloves garlic
- 1 tsp annatto seeds
- 8 cups water
- 3 green onions
- Fish sauce, to taste
- Ground black pepper, to taste
- 4 tbsp cooking oil
How to cook Sotanghon with Sayote and Giniling
- 1.Warm the oil with annatto seeds, stirring until orange and shimmering; turn off the heat, steep briefly, then strain out the seeds.
- 2.Use the annatto oil to brown the garlic, then sauté the onion and lower portions of the green onions until softened.
- 3.Add ground pork and cook until browned; stir in 2 tsp fish sauce.
- 4.Add 2 cups water, cover, boil, then cook over low heat for 2 minutes.
- 5.Add the remaining water, bring to a boil, then add chayote and sotanghon; cook 8 minutes.
- 6.Season with fish sauce and pepper, garnish with chopped green onion, and serve hot.
