Filipino Chicken Macaroni Sopas
Creamy chicken macaroni sopas is a comforting, hearty Filipino soup.

Ingredients for Filipino Chicken Macaroni Sopas
- 1 lb chicken, skin removed
- 2 ounces ham, chopped
- 1/2 lb elbow macaroni
- 4 stalks celery, minced
- 1 medium yellow onion, minced
- 1 large carrot, diced
- 1 1/2 cups chopped cabbage, optional
- 4 cups chicken broth
- 6 cups water
- 1 1/2 cups fresh milk or 1 (14-ounce) can evaporated milk
- 3 tablespoons butter
- Salt and pepper, to taste
How to cook Filipino Chicken Macaroni Sopas
- 1.Bring water to a boil. Add chicken and cook over low-medium heat for 45 minutes, until tender.
- 2.Remove chicken, reserve the cooking water, cool chicken, then shred the meat and discard bones.
- 3.Melt butter in a clean pot over medium heat. Sauté onion, carrot, and celery for 3 minutes; add chicken and ham for 2 minutes.
- 4.Add chicken broth and reserved cooking water. Bring to a boil, then simmer for 20 minutes.
- 5.Add macaroni and cook 15 minutes, adding water if needed. Stir in milk and cabbage, if using, and bring to a boil.
- 6.Season with salt and pepper, then serve.
