Fried Bangus (Fried Milkfish)

Fried Bangus delivers crisp, golden milkfish with a lightly tangy garlic marinade.

Ingredients for Fried Bangus (Fried Milkfish)

  • 1 large boneless bangus (milkfish), scaled, cleaned, and butterflied
  • 1/2 cup white vinegar
  • 4 cloves garlic, crushed
  • 1/2 teaspoon whole peppercorns
  • 1/2 teaspoon salt
  • 1 cup cooking oil

How to cook Fried Bangus (Fried Milkfish)

  1. 1.Mix vinegar, garlic, peppercorns, and salt in a bowl.
  2. 2.Place bangus flesh-side down in a deep plate, cover with marinade, and refrigerate for 8 to 12 hours.
  3. 3.Heat oil in a pan over medium heat. Fry bangus about 5 minutes per side until medium brown and crisp.
  4. 4.Cover loosely while frying to control splatter and allow steam to escape. Serve with sinamak.
