Filipino Vinegar Dipping Sauce offers three sharp, spicy Sukang Sawsawan variations for grilled and fried dishes.

Ingredients for Filipino Vinegar Dipping Sauce (Sukang Sawsawan)
- Sinamak: 1 1/2 cups coconut vinegar
- Sinamak: 2 tbsp soy sauce
- Sinamak: 1 1/2 tsp sugar
- Sinamak: 4 cloves garlic, chopped
- Sinamak: 1 onion, chopped
- Sinamak: 1/4 tsp ground black pepper
- Sinamak: 5 Thai chili peppers, chopped
- Sinamak: 1 siling pansigang, sliced
- Sinamak: 2 tbsp green onion, chopped
- Sinamak: salt, to taste
- Tokwat Baboy-style: 1 1/2 cups coconut vinegar
- Tokwat Baboy-style: 8 Thai chili peppers
- Tokwat Baboy-style: 1/2 bell pepper
- Tokwat Baboy-style: 2 cloves garlic
- Tokwat Baboy-style: 1 tsp whole peppercorn
- Tokwat Baboy-style: 2 thumbs ginger
- Tokwat Baboy-style: salt, to taste
- Panlasang Pinoy spicy vinegar: 1 cup coconut vinegar
- Panlasang Pinoy spicy vinegar: 1/2 cup Thai chili peppers
- Panlasang Pinoy spicy vinegar: 4 thumbs ginger, julienned
- Panlasang Pinoy spicy vinegar: 1 garlic head, crushed
How to cook Filipino Vinegar Dipping Sauce (Sukang Sawsawan)
- 1.For Sinamak, combine its listed ingredients in a clean mason jar. Seal and steep for at least 3 days before using.
- 2.For the Tokwat Baboy-style sauce, heat its vinegar with salt and sugar until dissolved, then cool completely.
- 3.Transfer cooled Tokwat Baboy-style vinegar to a jar with its chilies, bell pepper, garlic, peppercorns, and ginger. Seal, shake, and refrigerate.
- 4.For Panlasang Pinoy spicy vinegar, heat its vinegar with salt until dissolved and let it cool.
- 5.Process cooled spicy vinegar with its chilies, ginger, and garlic for 2 minutes. Transfer to a clean jar and use immediately.
