Sotanghon Guisado

Sotanghon Guisado is a savory vermicelli stir-fry with pork, vegetables, and fragrant annatto oil.

40 minutes · Serves 4

Ingredients for Sotanghon Guisado

  • 6 oz pork shoulder, sliced
  • 1 Knorr Shrimp Cube
  • 300 g sotanghon vermicelli
  • 1/2 head cabbage, sliced
  • 1 carrot, sliced
  • 1 red bell pepper, sliced
  • 1 bunch green onion, sliced
  • 3 oz snow peas
  • 1 onion, chopped
  • 8 cloves garlic, crushed
  • 2 tsp annatto seeds
  • 1/4 cup soy sauce
  • 1 cup water, divided
  • 1/4 cup cooking oil
  • Fish sauce, to taste
  • Ground black pepper, to taste

How to cook Sotanghon Guisado

  1. 1.Soak sotanghon in water for 10 to 12 minutes. Heat oil, fry garlic until brown, then remove and reserve it.
  2. 2.Add annatto seeds to the garlic oil for about 10 seconds until orange; remove and discard seeds. Brown pork in the oil.
  3. 3.Pour off excess oil, leaving about 3 tablespoons. Sauté onion until soft, add carrot for 1 minute, then add soy sauce and 1/2 cup water.
  4. 4.Add Shrimp Cube, cabbage, snow peas, and bell pepper; cook 2 minutes. Toss in drained sotanghon until evenly mixed.
  5. 5.Add remaining water, cover, and cook over low heat for 3 minutes. Add green onion, season, and top with reserved toasted garlic.
