Braised Pork Soft Bones
Slow-braised pork soft bones become tender in an aromatic soybean paste and spice sauce.

Ingredients for Braised Pork Soft Bones
- 1 kg pork soft bones
- 12 dried red chilies
- 6 cloves garlic, minced
- 2 spring onion stalks, tied in a knot
- 1 spring onion stalk, chopped, for garnish
- 1 thumb-sized ginger, thinly sliced
- 1 tablespoon soybean paste
- 2 cups water
- 1 tablespoon light soy sauce
- 3 star anise
- 2 bay leaves
- 1 cinnamon stick
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil
How to cook Braised Pork Soft Bones
- 1.Season pork soft bones with salt.
- 2.Heat oil in a wok over high heat until smoking; stir-fry pork until browned around the edges.
- 3.Add garlic, ginger, dried chilies, and soybean paste; sauté for 1 minute until fragrant.
- 4.Add water, soy sauce, star anise, bay leaves, cinnamon, and knotted spring onions. Boil, cover, then simmer 1 hour until tender.
- 5.Raise heat during the final 10 minutes to reduce the braising liquid into a glossy sauce.
- 6.Season with salt and pepper, garnish with chopped spring onion, and serve.
