Adobong Baboy sa Gata combines tender pork belly with reduced, fragrant coconut adobo sauce.

Ingredients for Adobong Baboy sa Gata (Pork Adobo in Coconut Milk)
- 2 lb pork belly, cubed
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 6 cloves garlic, crushed
- 2 cups coconut cream
- 2 teaspoons whole peppercorns
- 3 dried bay leaves
- 1 1/2 cups water
- 2 tablespoons cooking oil (optional)
- Salt, to taste
How to cook Adobong Baboy sa Gata (Pork Adobo in Coconut Milk)
- 1.Mix pork, soy sauce, vinegar, and garlic; marinate for 3 hours.
- 2.Drain pork, reserving the marinade. Cook pork in a pot over medium heat until browned.
- 3.Add oil, if using, and cook for 1 minute until garlic lightly browns.
- 4.Add reserved marinade, water, peppercorns, and bay leaves. Cover and boil over medium heat until pork is tender.
- 5.Stir in coconut cream, cover, and cook for 10 minutes. Continue boiling until reduced by half, then season with salt.
