Beef Pater

Beef pater wraps moist turmeric-seasoned shredded brisket and rice in softened banana leaves with palapa on the side.

Ingredients for Beef Pater

  • 1 kg beef brisket, cubed
  • 1 large yellow onion, finely chopped
  • 1 whole head garlic, minced
  • 4 tbsp soy sauce, preferably Silver Swan
  • 2 tbsp oyster sauce
  • 2 tsp freshly cracked black pepper
  • 2 tsp ground turmeric
  • 1 tsp sea salt
  • 3 tbsp cooking oil
  • 3 cups water, plus extra as needed
  • 10 banana leaf squares, 8 x 8 inches, briefly passed over flame to soften
  • 10 cups cooked rice or turmeric rice
  • Palapa, for serving

How to cook Beef Pater

  1. 1.Heat the cooking oil in a heavy pot over medium heat, saute the onion until translucent, then add the garlic and cook until fragrant.
  2. 2.Add the beef brisket and sear until the pieces are browned on the outside.
  3. 3.Pour in 3 cups water, scrape the bottom of the pot to loosen browned bits, and bring to a boil.
  4. 4.Lower the heat, cover, and simmer for about 2 hours, adding 1/2 cup hot water at a time if the pot gets too dry, until the beef is tender.
  5. 5.Transfer the beef to a bowl and reserve 1/2 cup of the broth; shred the beef with forks.
  6. 6.Return the shredded beef and reserved broth to the pot, then add soy sauce, oyster sauce, black pepper, turmeric, and sea salt.
  7. 7.Cook uncovered for about 10 minutes, stirring, until most liquid has evaporated but the beef remains moist.
  8. 8.Lay a softened banana leaf square on a flat surface, add 1 cup cooked rice, top with beef, and leave about a 2 cm border.
  9. 9.Fold the leaf lengthwise around the filling, tuck in the ends to make a tight packet, and repeat with the remaining rice and beef.
  10. 10.Serve warm with palapa, either wrapped or opened on the banana leaf.
