Suman sa Ibos
Tender coconut rice cakes wrapped in buri leaves are especially good with ripe mango.

Ingredients for Suman sa Ibos
- 4 cups glutinous rice, rinsed
- 1 1/4 tablespoons sea salt
- 2 1/4 cups coconut milk
- 1 cup water
- Buri leaves, formed into small cylindrical containers
- Ripe mangoes, for serving
How to cook Suman sa Ibos
- 1.Soak the rinsed glutinous rice in the water until absorbed, then gently stir in coconut milk and sea salt; rest 10 minutes.
- 2.Fill and securely seal buri leaf cylinders with the rice mixture.
- 3.Arrange packets in a large pot, add about 1 quart water, and bring to a boil.
- 4.Lower to low-medium heat and steam-boil for 60 minutes, until the rice is tender; cool slightly.
- 5.Serve warm or at room temperature with ripe mangoes.
