Inampalayahang Manok
Inampalayahang Manok is a home-style chicken stew softened by tomatoes and balanced with bitter gourd.

Ingredients for Inampalayahang Manok
- 1 1/2 kg chicken thighs, cut into sections
- 2 bitter gourds, sliced
- 3 tomatoes, quartered
- 2 onions, sliced
- 6 garlic cloves, minced
- 1 thumb-sized ginger, thinly sliced
- Water or chicken stock
- Salt, to taste
- Freshly ground black pepper, to taste
- Fish sauce, to taste
- Oil
How to cook Inampalayahang Manok
- 1.Season chicken generously with salt and pepper. Salt the bitter gourd separately and set it aside.
- 2.Heat oil in a heavy pot and brown chicken on all sides; remove it from the pot.
- 3.Sauté garlic, onions, and ginger in the same pot, then add tomatoes and cook until soft.
- 4.Return chicken and add enough water or stock to cover it. Bring to a boil, then simmer for 30 minutes.
- 5.Rinse bitter gourd thoroughly and add it to the pot; cook 10 minutes until tender.
- 6.Season with fish sauce and pepper, then serve hot.
