Inihaw na Panga
Inihaw na Panga is juicy grilled fish jaw brushed with a sweet-tangy garlic basting sauce.

Ingredients for Inihaw na Panga
- 2 kg large fish jaw, such as tuna, hapuka, or grouper
- 1/2 cup soy sauce
- Juice of 1 lemon
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/3 cup soy sauce
- 1/4 cup water
- 1/3 cup packed brown sugar
- Juice of 1/2 lemon
- 2 teaspoons cornstarch
- 3 cloves garlic, minced
- 2 tablespoons oil
How to cook Inihaw na Panga
- 1.Combine 1/2 cup soy sauce, juice of 1 lemon, salt, and pepper. Marinate fish jaw for at least 2 hours.
- 2.For basting sauce, sauté garlic in oil over low heat until fragrant.
- 3.Whisk remaining soy sauce, water, brown sugar, lemon juice, and cornstarch until smooth; add to garlic and bring to a boil.
- 4.Simmer the sauce for 2 minutes until thickened. Drain the fish jaw.
- 5.Grill over charcoal or medium-high heat for 10 to 15 minutes per side, brushing continuously with sauce during the final 5 minutes.
