Bohol Adobo
Bohol Adobo is a dark, tangy pork adobo with black beans, annatto, and fried potatoes.

Ingredients for Bohol Adobo
- 1 kg pork belly, cubed
- 3 medium floury potatoes, quartered
- 1 whole garlic, minced
- 1/2 cup cane vinegar
- 1/3 cup Philippine soy sauce or Kikkoman soy sauce
- 4 tbsp black beans, drained and roughly mashed
- 2 tbsp annatto powder, dissolved in 4 tbsp boiling water
- 1 tbsp sugar
- Oil
- 1 tsp cornstarch
- 4 bay leaves
- 2 tbsp whole peppercorns
- 1 1/4 cups water, divided
How to cook Bohol Adobo
- 1.Deep-fry potatoes in hot oil until golden; drain and set aside.
- 2.Sauté garlic in oil over low heat until golden, then remove and reserve it.
- 3.Fry pork belly until browned. Add 1 cup water, vinegar, soy sauce, black beans, annatto, peppercorns, bay leaves, and sugar.
- 4.Bring to a boil, cover, and simmer for about 1 hour until pork is tender; reduce the sauce near the end.
- 5.Mix cornstarch with remaining 1/4 cup water. Add slurry and potatoes, then simmer 5 minutes before serving.
