Kilayin
Kilayin is a tangy, peppery pork offal stew with a deep vinegar bite.

Ingredients for Kilayin
- 500 g pork belly, thinly sliced into strips
- 200 g pork liver, thinly sliced into strips
- 200 g pork lungs, finely chopped
- 1 pork heart, cut into 1-inch strips
- 1 1/4 cups vinegar
- 1 cup water
- 6 cloves garlic, minced
- 1 medium onion, finely chopped
- 1/2 tsp cayenne pepper, or more to taste
- Freshly ground black pepper, to taste
- Fish sauce, to taste
- Salt, to taste
- Cooking oil
How to cook Kilayin
- 1.Marinate pork belly and heart with 1/2 cup vinegar and salt; separately marinate liver with 1/2 cup vinegar and salt for 30 minutes.
- 2.Drain all meats thoroughly, reserving the marinade. Heat oil in a wok and sauté garlic and onion until fragrant.
- 3.Add pork belly, heart, and lungs; cook until lightly browned. Add remaining 1/4 cup vinegar, water, and cayenne, then bring to a boil.
- 4.Cover and simmer on low for 30 minutes. Add liver and simmer 10 minutes more, until all meats are cooked; season with fish sauce and black pepper.
