Pineapple Braised Pork Ribs
Sweet pineapple and raisins balance these slow-braised, savory pork ribs.

Ingredients for Pineapple Braised Pork Ribs
- 1 1/2 kg pork ribs
- 1 large potato, cubed
- 400 g canned pineapple pieces or tidbits
- 2 cups pineapple juice
- 1 cup chicken stock
- 1/4 cup soy sauce
- 1/4 cup raisins
- 1 thumb-sized ginger, minced
- 1 onion, chopped
- 4 cloves garlic, minced
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Pineapple Braised Pork Ribs
- 1.Heat oil for deep-frying and fry potato until golden and crisp; drain.
- 2.Heat oil in a wok and sauté garlic, onion, and ginger until fragrant. Add ribs and brown lightly.
- 3.Add pineapple juice, chicken stock, and soy sauce. Bring to a boil, cover, and simmer on low for 1 hour, adding water if needed.
- 4.Add raisins and pineapple; simmer 15 minutes. Add fried potato, season with fish sauce and pepper, and simmer 5 minutes.
