Tapa and Egg Fried Rice
Tapa and Egg Fried Rice combines soy-cured horse meat with a colorful leftover-rice stir-fry.

Ingredients for Tapa and Egg Fried Rice
- 1 lb horse meat, thinly sliced
- 1 head garlic, crushed
- 1/2 cup soy sauce, divided
- 1/4 tsp ground black pepper
- 2 tsp salt, divided
- 2 tsp sugar
- 3/4 cup water
- 1 1/2 cups lemon-lime soda
- 4 tbsp cooking oil
- 4 cups leftover rice
- 3 eggs, beaten
- 1 onion, minced
- 1/4 cup green onion, chopped and divided
- 1 red bell pepper, minced
- 2 tsp sesame oil
How to cook Tapa and Egg Fried Rice
- 1.Mix garlic, 1/2 cup soy sauce, 1 teaspoon salt, pepper, and sugar. Coat horse meat, cover, and refrigerate for at least 3 hours.
- 2.Place meat, water, and 2 tablespoons oil in a pan. Bring to a boil, add lemon-lime soda, and cook uncovered until liquid evaporates.
- 3.Fry tapa in the remaining oil for 2 minutes until browned; set aside.
- 4.Cook beaten eggs in the same pan and break into pieces. Add onion, half the green onion, and bell pepper; stir-fry for 2 minutes.
- 5.Add rice, remaining soy sauce, and sesame oil. Stir-fry 3 to 5 minutes, season with remaining salt if needed, and serve with tapa and green onion.
