Taghilaw
Taghilaw is a robust pork offal stew simmered in a sharp vinegar and pork-stock broth.

Ingredients for Taghilaw
- 300 g pork neck, cubed
- 300 g pork small intestines, sliced
- 100 g pork liver, cubed
- 1 pork heart, cubed
- 1 small piece pig's brain
- 1/2 cup vinegar
- 1 cup pork stock
- 3 bird's-eye chillies
- 1 whole garlic, minced
- 2 onions, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Taghilaw
- 1.Season pork neck, intestines, heart, liver, and pig's brain with salt and black pepper.
- 2.Heat oil in a wok and sauté garlic and onions until fragrant.
- 3.Add intestines, pork neck, and heart; cook until lightly browned at the edges.
- 4.Add vinegar and pork stock, bring to a boil, cover, and simmer gently for 30 minutes.
- 5.Add liver, pig's brain, and chillies; cook 15 minutes more, adjust seasoning, and serve.
