Kwek-Kwek
Kwek-Kwek are crunchy orange-battered quail eggs served with a sweet, spicy vinegar dip.

Ingredients for Kwek-Kwek
- 36 hard-boiled quail eggs, peeled
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 cup cold water
- 1 tbsp annatto powder
- Salt
- Freshly ground black pepper
- Oil, for frying
- 1/3 cup white vinegar
- 1/3 cup water
- 3 tbsp sugar
- 1 small shallot, finely chopped
- 1 clove garlic, minced
- 1 red chilli, finely chopped with seeds
- 1/2 tsp salt
- Freshly ground black pepper, for the dip
How to cook Kwek-Kwek
- 1.Whisk flour, cornstarch, baking powder, cold water, annatto powder, salt, and pepper until smooth. Rest batter for at least 30 minutes.
- 2.Mix vinegar, water, sugar, shallot, garlic, chilli, salt, and pepper for the dip; set aside.
- 3.Coat each peeled quail egg thoroughly in batter.
- 4.Deep-fry eggs in hot oil, adding them one at a time, until the coating is crisp and golden brown.
- 5.Drain on paper towels and serve hot with the vinegar dip.
