Tinola sa Miso
Tinola sa Miso is a deeply savory chicken soup enriched with yellow miso and leafy greens.

Ingredients for Tinola sa Miso
- 1 kg free-range chicken thighs and legs
- 3 heaping tablespoons yellow miso
- 1 litre chicken stock
- 1 bunch spinach leaves
- 1 bunch finger chilli leaves or capsicum leaves
- 1 thumb ginger, thinly sliced
- 1 large red onion, chopped
- 6 cloves garlic, minced
- Oil
- Fish sauce or sea salt, to taste
- Ground black pepper, to taste
How to cook Tinola sa Miso
- 1.Heat oil in a pot and sauté garlic, onion, and ginger until the onion softens.
- 2.Add chicken and brown all sides over high heat for 2 minutes.
- 3.Add stock, bring to a boil, and simmer 45 minutes for free-range chicken, or about 20 minutes for regular chicken.
- 4.Stir in miso and simmer 15 minutes. Add chilli leaves and spinach, cover for 1 minute, then season with fish sauce and pepper.
