Bangus Filipino Paksiw
Bangus Filipino Paksiw is a tangy vinegar-poached milkfish layered with vegetables and aromatics.

Ingredients for Bangus Filipino Paksiw
- 3 1/2 lb milkfish, cleaned and sliced crosswise into serving pieces
- 3 oz pork fat, chopped
- 5 thumbs ginger, thinly sliced
- 1 head garlic, crushed
- 1 1/4 cups white vinegar
- 2 cups water
- 2 onions, thinly sliced
- 2 Chinese eggplants, sliced
- 2 bitter melons, sliced
- 5 long green peppers
- 2 tsp whole peppercorns
- Fish sauce, to taste
How to cook Bangus Filipino Paksiw
- 1.Heat a wide pan over medium heat and render the pork fat until it releases enough oil.
- 2.Turn off the heat; layer garlic, ginger, onions, and peppercorns in the pan.
- 3.Arrange milkfish, long green peppers, eggplant, and bitter melon over the aromatics.
- 4.Pour in vinegar, cover, bring to a boil, and cook for 2 minutes.
- 5.Add water, return to a boil, then simmer 15 minutes until the fish and vegetables are cooked.
- 6.Season with fish sauce and serve with rice.
