Bopis (Kapampangan Pulutok)
Kapampangan Pulutok Bopis is a deeply savory minced pork-lung dish finished until it pops on a hot plate.

Ingredients for Bopis (Kapampangan Pulutok)
- 1 tablespoon oil, for frying
- 2 tablespoons annatto powder or annatto seeds
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 1/2 kg pork lungs, minced
- 1/2 cup vinegar
- 1 tablespoon salt
- 1 teaspoon ground pepper
- 1 cup carrots, finely diced
- 2 green finger chilies, thinly sliced diagonally
How to cook Bopis (Kapampangan Pulutok)
- 1.Heat oil over medium heat and dissolve annatto powder until the oil is orange; if using seeds, remove them once colored.
- 2.Sauté garlic and onion in annatto oil until soft and aromatic.
- 3.Add pork lungs and cook for 5 minutes, until browned.
- 4.Pour in vinegar and simmer untouched for 2 minutes.
- 5.Season with salt and pepper, cover, and simmer until tender; add water 1/2 cup at a time only if needed.
- 6.Uncover, add carrots and green chili, and cook while stirring until most liquid evaporates.
- 7.For Pulutok, cook a portion on a very hot skillet or sizzling plate until it begins popping, then serve.
