Goto
Goto is a comforting safflower-tinted rice porridge with tripe, crackling, and classic toppings.

Ingredients for Goto
- 300 g cooked ox tripe, sliced into strips
- 300 g pork crackling, broken into small pieces
- 1 cup glutinous rice
- 10 to 12 cups beef broth
- 1 garlic bulb, minced
- 1 brown onion, chopped
- 1 medium ginger, thinly sliced
- freshly ground black pepper, to taste
- fish sauce, to taste
- oil, for sautéing
- 2 lemons, cut into wedges
- 1/2 cup spring onions, chopped
- 2 teaspoons kasubha (safflower threads)
- fried garlic
- 6 boiled eggs
How to cook Goto
- 1.Heat oil in a pot and sauté garlic, onion, and ginger until fragrant.
- 2.Add beef broth, kasubha, and glutinous rice; boil, then simmer for 15 minutes, stirring every 5 minutes.
- 3.Add cooked ox tripe and simmer for another 25 minutes until rice is tender and porridge-like.
- 4.Season with fish sauce and black pepper.
- 5.Ladle into bowls; top with an egg, spring onions, fried garlic, and pork crackling, with lemon alongside.
