Ginisang Upo at Kalabasa – Sauteed Opo and Butternut Squash
Ginisang Upo at Kalabasa is a simple pork sauté with tender squash and fresh upo.

Ingredients for Ginisang Upo at Kalabasa – Sauteed Opo and Butternut Squash
- 1 small upo, cubed
- 2 cups kalabasa or butternut squash, cubed
- 4–6 oz pork belly, thinly sliced
- 1 onion, chopped
- 4 cloves garlic, crushed
- 1 medium ripe tomato, cubed
- 2–3 tbsp fish sauce (patis)
- 1/4 tsp ground black pepper
- 1/2–3/4 cup water
How to cook Ginisang Upo at Kalabasa – Sauteed Opo and Butternut Squash
- 1.Heat a pot and sear pork belly until it releases its fat.
- 2.Add onion, garlic, and tomato; sauté until onion softens.
- 3.Add water, bring to a boil, cover, and cook over low to medium heat until pork is tender and liquid evaporates; add water if needed.
- 4.Add kalabasa and sauté over high heat for 3–5 minutes. Add upo and sauté 2 minutes.
- 5.Season with patis and pepper. Add up to 1/2 cup water for a saucier dish, then serve.
