Ingredients for Binagoongang Okra with Chicharon Bits
- 500 g okra, trimmed
- 1 cup crushed chicharon, plus more for garnish
- 2 Roma tomatoes, finely chopped
- 1 tbsp sautéed bagoong
- 2 small shallots, finely chopped
- 6 cloves garlic, minced
- Oil, for cooking
How to cook Binagoongang Okra with Chicharon Bits
- 1.Heat oil in a wok over medium heat. Sauté shallots until softened.
- 2.Add garlic and tomatoes; cook 1 minute, crushing the tomatoes gently to release their juices.
- 3.Stir in sautéed bagoong and crushed chicharon. Add a little water only if the mixture needs moisture.
- 4.Bring the sauce to a boil and adjust seasoning if needed. Add okra and sauté 4 to 5 minutes, until cooked but still crisp.
- 5.Remove from heat and top with extra chicharon before serving.
