Pan de Siosa is a soft Filipino pull-apart bread finished with melted butter, sugar, and grated cheese for a sweet-salty bakery treat.

Ingredients for Pan de Siosa
4 cups high-grade flour
1/4 cup plus 1 teaspoon white sugar, divided
2 1/4 teaspoons yeast
1/4 cup warm water
3/4 cup warm milk
1 large egg
1/4 cup softened butter
1 teaspoon salt
Melted butter, for topping
White sugar, for topping
Grated cheddar cheese, for topping
1 large egg, beaten, for brushing
How to cook Pan de Siosa
1.In a bowl, combine the yeast, warm water, and 1 teaspoon white sugar; let stand until foamy.
2.Transfer the yeast mixture to a stand mixer and add the flour, remaining 1/4 cup sugar, warm milk, egg, softened butter, and salt.
3.Using the dough hook, knead on the lowest speed for 5 minutes, then increase one speed level and knead for 10 minutes more, until the dough is elastic and stretchy; knead up to 5 minutes longer if needed.
4.Shape the dough into a ball, place it in a large bowl, cover with a damp cloth, and let rise in a warm place until doubled, about 1 1/2 to 3 hours depending on room conditions.
5.Gently deflate the dough and divide it into 21 to 24 portions. Shape each portion into a ball and arrange evenly among three 9-inch round baking pans.
6.Cover the pans with a damp towel and let the dough rise again until doubled.
7.Heat the oven to 180C. Brush the tops with beaten egg and bake for 18 to 20 minutes, until lightly golden.
8.Remove from the oven, brush or pour melted butter over the buns, then sprinkle generously with white sugar and grated cheddar cheese.
