Pinaputok na Tilapia

Pinaputok na Tilapia bakes mango-and-tomato-stuffed fish until juicy, then broils it golden.

Ingredients for Pinaputok na Tilapia

  • 2 tilapia, cleaned and scaled
  • 3/4 cup green mango, diced
  • 1 tomato, diced
  • 1 onion, chopped
  • 1 tsp ginger, minced
  • 1 tbsp lemon juice
  • 2 tsp cooking oil
  • Salt and pepper, to taste

How to cook Pinaputok na Tilapia

  1. 1.Cut 2–3 deep slits on each side of each tilapia. Rub each side with about 1 teaspoon salt and rest 15 minutes.
  2. 2.Mix mango, tomato, onion, ginger, lemon juice, salt, and pepper. Stuff the fish cavities with the mixture.
  3. 3.Wrap each fish completely in foil. Bake at 370°F for 20 minutes.
  4. 4.Open the foil, brush fish with oil, and broil at about 510°F for 15 minutes until browned and cooked through.
  5. 5.Serve with toyomansi.
