Ingredients for Binagoongan Baboy sa Gata
- 1 kg pork belly, cubed
- 2 tbsp vinegar
- 400 ml coconut milk
- 1 cup water
- 4 tbsp bagoong
- 5 garlic cloves, minced
- 1 red onion, finely chopped
- 2 large tomatoes, chopped
- 1 tbsp sugar
- 3 bay leaves
- 6 green finger chilies
- Freshly ground black pepper, to taste
- Cooking oil
How to cook Binagoongan Baboy sa Gata
- 1.Heat oil in a pot over medium-high heat and brown pork on all sides; remove and set aside.
- 2.Sauté garlic and onion until soft, then add tomatoes and cook until they break down.
- 3.Return pork and add vinegar, half the coconut milk, bay leaves, and water. Simmer 45 minutes, until tender.
- 4.Stir in bagoong, remaining coconut milk, sugar, and finger chilies.
- 5.Simmer until the sauce reduces and turns rich, then season with black pepper and serve.
