Tapsilog
Tapsilog pairs garlicky fried rice with crisp-edged marinated beef tapa.

Ingredients for Tapsilog
- 4 cups cold cooked long-grain rice
- Oil, for cooking
- 1 clove garlic, minced
- Salt, to taste
- Ground black pepper, to taste
- 800 g beef tenderloin, sliced 1/2 cm thick
- 2 whole garlic bulbs, crushed with skins on
- 1 tsp ground black pepper
- 1 cup white vinegar
- 5 bay leaves
- 2 tsp salt
How to cook Tapsilog
- 1.Mix crushed garlic, black pepper, vinegar, bay leaves, and salt. Cut beef into 2 x 3-inch pieces, coat, and marinate for at least 1 day.
- 2.Fry minced garlic in oil over medium heat until golden and crisp. Add rice and stir-fry for about 10 minutes; season with salt and pepper.
- 3.Drain the beef and pat dry. Heat oil in a pan over medium-high heat.
- 4.Fry beef until crisp outside and browned on both sides, then serve alongside the garlic rice.
