Perdis
Perdis is a fragrant chicken stew with Mallorca liqueur, warm spices, and boiled eggs.

Ingredients for Perdis
- 1 1/2 kg chicken, preferably bone-in
- 2 tablespoons soy sauce
- 1/3 cup Mallorca liqueur, or sweet red wine plus a splash of orange extract
- 1 cup chicken stock
- 1 large onion, sliced
- 6 cloves garlic, crushed
- 1 thumb-sized ginger, sliced
- 2 tomatoes, chopped
- 2 star anise
- 1 small cinnamon stick
- 1 bay leaf
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons oil
- 6 boiled eggs
How to cook Perdis
- 1.Heat oil over medium-high heat and sear chicken until lightly golden; transfer to a plate.
- 2.In the same pot, sauté garlic, onion, ginger, and tomatoes until soft and fragrant.
- 3.Add Mallorca liqueur, scrape up browned bits, and cook 1 to 2 minutes so the alcohol evaporates.
- 4.Return chicken with soy sauce, star anise, cinnamon, bay leaf, and stock. Cover and simmer about 30 minutes.
- 5.Cook until chicken is tender and sauce is glossy. Season with salt and pepper, add boiled eggs, and serve with rice.
