Ginataang Monggo with Pork
Ginataang Monggo with Pork is a rich coconut mung bean stew finished with leafy greens.

Ingredients for Ginataang Monggo with Pork
- 7 oz mung beans, soaked overnight in 4 cups water
- 1 Knorr Pork Cube
- 1/2 lb pork belly, thinly sliced
- 2 cups coconut milk
- 1 bunch fresh spinach
- 3/4 cup ampalaya leaves
- 4 Thai chilli peppers, optional
- 1 medium white onion, chopped
- 5 garlic cloves, minced
- 3 tbsp fish sauce
- 1/2 tsp ground black pepper
- 4 to 6 cups water
How to cook Ginataang Monggo with Pork
- 1.Heat a pot and sear pork until it renders oil. Sauté onion and garlic until the onion softens.
- 2.Add soaked mung beans and sauté for 2 to 3 minutes.
- 3.Add 4 cups water, coconut milk, and Pork Cube. Bring to a boil, cover, and cook over low-medium heat for 30 to 35 minutes.
- 4.Add more water if needed to prevent drying. Add spinach, ampalaya leaves, and optional chillies; cover and cook 2 minutes.
- 5.Stir in fish sauce and black pepper, then serve.
