Ginisang Monggo with Kalabasa
Ginisang Monggo with Kalabasa is a thick, shrimp-scented mung-bean stew with squash and greens.

Ingredients for Ginisang Monggo with Kalabasa
- 14 oz mung beans
- 1 lb calabaza squash, cubed
- 1/4 cup salted dried shrimp (hibe)
- 1 cup malunggay leaves
- 2 cups spinach
- 2 tomatoes, diced
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 cup chicharon
- 8 g Maggi Magic Sarap
- 3 tbsp fish sauce
- 1/4 tsp ground black pepper
- 1 1/2 quarts water, divided
- 3 tbsp cooking oil
How to cook Ginisang Monggo with Kalabasa
- 1.Soak mung beans overnight in 1/2 quart water.
- 2.Heat oil in a deep pot. Sauté garlic until browning, then add onion and tomatoes until soft.
- 3.Add hibe and soaked mung beans. Add fish sauce and 1 quart water; cover and simmer until beans are soft and broth is thick.
- 4.Add calabaza squash, cover, and cook until tender; add water as necessary.
- 5.Add malunggay leaves and spinach for 1 minute. Season with pepper and Maggi Magic Sarap, then top with chicharon.
