Dumaguete Express
Seafood, coconut, and malunggay create a lush Dumaguete-style stew.

Ingredients for Dumaguete Express
- 350 g small squid, cleaned and sliced
- 350 g white-fleshed fish, cubed
- 350 g prawns, shelled
- 1 cup young coconut meat, cut into strips
- 1/2 packed cup malunggay leaves
- 400 ml coconut milk
- 1 cup coconut water
- 3 green chillies, chopped
- 2 small shallots, finely chopped
- 2 small tomatoes, chopped
- 1/2 thumb-sized ginger, sliced
- Fish sauce, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
- Lechon kawali, chopped, for topping
- Oil
How to cook Dumaguete Express
- 1.Over medium-high heat, pan-fry prawns and squid in batches for about 1 minute per batch; remove.
- 2.Add oil if needed, then sauté shallots and ginger until fragrant.
- 3.Add coconut milk and coconut water, bring to a boil, then simmer on low for 5 minutes.
- 4.Add fish, malunggay, young coconut, and tomatoes; cook over medium-high heat for 5 minutes.
- 5.Return squid and prawns, add chillies, season with fish sauce, and simmer 2 minutes.
- 6.Season with salt and pepper; top with chopped lechon kawali and serve.
